A Very Bearded Birthday

Recently The Beard had a birthday and like any good girlfriend I wanted to make sure we celebrated in style! So I covertly booked us a room at the Alexander Hotel downtown and put it in our shared calendar.

Calendar Side Note: If you and your significant other don’t have a shared calendar system on your phones I highly recommend it! We use the google calendar app and that allows us to share our schedules with each other. Add that unexpected meeting, or that extra work shift, that doctor’s appointment, or block out a weekend on the calendar so nothing else is schedule because we are having a date night! It eliminates confusion, frustration and the argument that you did indeed mention that we are having dinner with your parents.

The hotel turned out to be amazing and we would gladly stay there again! It was a chic art boutique type hotel. Was that enough adjectives for you? Basically it was awesome! Let me give you a tour of our room.

Present Time! I wanted to make something special for The Beard and this year I decided to make him a table with all the GPS coordinates of our hikes.

Good news: He loved it! I also included a pair of Navy and Leather Chukka Boots, a new dress shirt from express, a mustache trimming kit and a Tile Tracker Wallet Edition.

If you’ve never heard of the tile tracker, it’s a pretty amazing invention. They make them to attach to your keys, purse, inside your wallet etc., and their location shows up on an app on your phone. Once you are within the vicinity they make noise, allowing you to find your misplaced items! Occasionally The Beard plays hide n seek with his stuff and this little device will help him win the game! We had breakfast at Yolk, a cute cafe attached to the back of the hotel. The food was delicious but my favorite was the strawberry orange juice!

We had a great birthday get-a-way. I’m a lucky girl to have such an amazing partner and I will never stop making the effort to make him feel special!

CBD Lifestyle: The Couple that Vapes Together

A few months ago I wrote a blog entitled CBD & Me: My Journey to Colorado. In it I discussed the profound effect that CBD & THC had on my health, not just helping pain, but actually eliminating it! However, since marijuana is illegal where I live I’ve been looking for alternative options.

CBD, short for Cannabidiol, is derived from the stalk and seed of cannabis plants. Cannabidiol oil is a natural botanical concentrate that is high in the compound CBD. Of the more than 85 cannabinoids so far identified in the cannabis plant, CBD is the second most common after tetrahydrocanabinal otherwise known as THC.

Hemp plants are naturally abundant in CBD and unlike their cannabis counterparts are low in THC. Thanks to a special extraction process, they are able to yield a highly concentrated CBD oil that also contains other nutritious materials suhc as omega-3, fatty acids, terpenes, vitamins, chlorophyll, amino acids, and other phytocannabinoids like CBD, CBG, CBN and CBCV. But best of all, CBD oil derived from hemp plants is legal in the US.

Hemp oil can be used in many forms including, cbd oil liquids, tinctures, capsules, gum and topically. The past few months I have been experimenting with the different methods of delivery to try to see what works best for me.

I started with Dixie Botanicals 100mg Dew Drops in Cinnamon Flavor. This is a pump system that you place two pumps worth under your tongue and hold till it all starts to dissolve. While it is cinnamon flavored, the hemp flavor is very strong, but after awhile you start to get used to it and forget that their was a time you didn’t know what hemp tasted like! When solely using this I averaged two pumps every few hours. At this dosage it did help take the edge off the pain, but did not eliminate severe flair ups.As with most things in life it’s a trial and error process to determine what dosage and delivery system will work best for your body’s needs.  Purchase Dixie Dew Drops

Most drop systems tend to take 45 minutes to an hour for your body to process and for the effects to set in.This means that you need to take these in a preventative form instead of reactive. If I wait till I’m doubled over in pain, waiting for the drops to kick in in an hour from now isn’t going to help me at that moment. In light of this I decided to venture into the world of vaping.

The first thing I purchased was Blue Moon Hemp’s BlackKat 100mg vape liquid. As described on their site it is “A Classic breakfast cereal flavor, like Lucky Charms with a touch of Cinnamon Toast.” Basically it’s delicious and I love it! While the 100mg of BlackKat tastes delicious and the quick delivery did help my pain, once again it wasn’t touching the severe flair ups I was frequently experiencing. So I decided to up my dosage to 1000 mg. Go big or go home am I right? I purchased the blueberry flavor which is light and subtle and perfect for someone who has issues with nausea. I counted over forty-six flavors available on their site. If I could request a flavor I would opt for ginger! There are several things I like about this particular company. Now, I bet you’re wondering what I am vaping with! I started with a G1 vaporizer and while I like it’s size, portability and carrying case, ultimately determined I needed something that would produce a better vape.

After doing some research I decided to Purchase the Minion Vape Mod Kit.  This was a major upgrade compared to the G1 vaporizer. The tank holds a substantial amount of liquid so you don’t have to worry about running out throughout the day. It also holds its charge for about a week depending on usage, which is amazing! If you’re thinking about venturing into the world of vaping I recommend starting with a quality vape kit. Don’t waste your money on cheap pens because you will end up upgrading!

The Beard has also starting vaping using Hemp Hookahzz Pineapple Express in 600mg. He has found it to help reduce stress and help with overall relaxation. The 600mg dosage did help with my pain, however due to my nausea I could not handle the strong flavor of the pineapple. I confirmed this one day when I had a migraine and was vaping and gagging, vaping and gagging. I could feel the migraine lessening with each pull but my stomach was saying stop it!

Side note about nausea: I probably spend around 70% of my life nauseous. If my pain levels are high so is my nausea. The two are best buds. I switched to an electric tooth brush years ago because manually brushing my teeth was a daily battle of trying for good dental hygiene and trying not to throw up. While the hemp oil does help with pain, it does not provide the same nausea relief I experienced with the 1 to 1 ratio of CBD and THC in Colorado. I had more of an appetite during my visit to CO than I have had in years. So to help with my general nausea I’m a big fan of ginger, hence why I would love a ginger flavored vape liquid!

In the mean time we have discovered a few ginger products that are like gold in my house.

My other go to is Q Ginger Beer. As it says on the can, “Sharp Ginger Bite, Not Too Sweet.” I have found this to be a major life savor for my nausea. As opposed to ginger ale which sometime has this thick sweet syrupy consistency, this is crisp and punches you in the mouth with ginger! Also, you can’t beat the list of ingredients: Carbonated water, organic agave, ginger extract, extracts of lime, coriander and cardamom, citric acid. Adventures in the ATL

This past weekend The Beard and I headed down to Atlanta for the Atlanta Salsa Festival. I had purchased our passes with their early bird special last November so we had been looking forward to it for awhile!

After a little bit of your average pre-trip frantic prep we made it to the airport and decided to start the flight off right with Starbucks. I have a very common name, and have been fortunate enough to not encounter many misspellings, but this barista took it to a whole other level. If you’re confused, this is their version of “Jessica.”

Our flight went smooth and we settled in on the Marta Train for an hour ride to the end of line. Our hotel had a shuttle that, according to their website, only needed 5 minutes notice to come pick us up. We exited the train and called the hotel at 3:47 and were told the shuttle was in route, but it was rush hour and would take a bit longer than usual. We found a shaded bench, because it’s Atlanta and sweltering, and sat down to relax for a bit.Fast forward 45 minutes and there is no shuttle to be found. We called the hotel once more and are told they are on their way, traffic is bad, blah blah blah. At this point a group of dancers had converged next to the curb, all here for the conference and waiting on the shuttle. We called once more and receive a different story for the delay but were assured it was on it’s way. At this point it is 5:15pm. We decided enough was enough and called an Uber. This was my first time using Uber, as I don’t have much need where I live currently, and let me tell you, we loved it! Our driver picked us up in 5 minutes and we were at the hotel in 10! Shout out to Fazle our Driver!

After we checked in we decided to grab a bite to eat, opting for a restaurant at another hotel near by. Little did we know that a local university’s football team would be arriving, and attending the Alumni Party at the restaurant. Nothing like trying to enjoy a flatbread pizza and salad with your love while having fifty year olds, who peaked in college and are clinging to the good ‘ole days, drunkenly shouting in your ear for the majority of your dining experience. At least the food was good! Isn’t he handsome?!

We headed back to the hotel and nothing sounded better than a nice relaxing soak in the tub. Only problem was, we were missing the tub stopper. We called down to the front desk and were told they would send one up. After thirty minutes had passed with no tub stopper and no bath I decided I was going downstairs. The Beard always finds it amusing when I get riled up, and of course aggs me on to go get them!

Set Scene: I walk up to the receptionist in the lobby.
Me: Hi, I called over 30 minutes ago about a stopper for my bath tub and I have not received it.
Receptionist: I’m so sorry! I think he is looking for it. Actually, that’s him right here.
*Pan over to man, leaning against the desk.
Receptionist: Did you find the tub stopper?
Maintenance Man: I am looking.
Receptionist: Right now?
Maintenance Man: Yes. *Continues to lean against the desk.
Me: Well, I think it’s safe to say we can eliminate the lobby as its location. *My sarcasm takes on a life of it’s own when I am frustrated.
Maintenance Man: I will bring to you. *Starts walking off
Me: Oh no. I will go with you. *Follows him down the hallway
Maintenance Man: *Walking, repeatedly looking over his shoulder* No, I bring to you.
Me: I will wait right outside this door. *It was marked private and I wasn’t that enraged at this point to follow him into the employee only section.

I proceed to wait another fifteen minutes before he reappeared with the plug. He had to come install it, as he wasn’t sure which screw it would need and an hour later I could finally take my bath. I pushed the plug down, turned on the water and immediately realized it wasn’t getting hot. The Beard tested the temperature on the sink and found it to be scalding. So what does one do now? Ice bucket time. We started filling the tub from the sink and after it was about halfway full the hot water returned to the shower lines and it was finally bath time! I don’t have any proof, but I feel like the maintenance man might also drive the shuttle….

We cleaned up and decided to head downstairs for the dance social, that according to their facebook event was scheduled to start at 8pm only to be told that they were still setting stuff up and it would be more like 9:30ish before the performances started. While I appreciate all the hard work people put into these performances, they just really aren’t my thing so we opted to go back to our room and wait them out while watching The Big Bang Theory.

We headed back down stairs around 10:30pm thinking the performances might be close to wrapping up. Turns out we severely under estimated the amount of performances and they didn’t finish up until after midnight! So it was around 12:30am before we finally had a chance to hit the dance floor! I know lots of dancers are perfectly fine staying up all night dancing, but that is not my typical Friday evening. We like to snuggle up with a pint of ice cream and watch the Blacklist!

Saturday we spent the day taking various workshops and had a lot of fun! We learned some awesome Casino routines, brushed up on our Bachata and even learned some cool lifts! Afterwards we went to the pool where the Beard was kind enough to act as my personal raft and whisk me around the water.

From there we scheduled another Uber and headed to our favorite restaurant from our last trip to Atlanta, Alma Cocina. Our driver Winston was awesome, and we convinced him to take his wife there whenever he was in need of brownie points!

Allow me to present our Chicken Mole, smoked green beans on a bed of smashed plantains and hibiscus sorbet with a coconut cream sauce and shaved coconut. SO GOOD!

Despite the crazy time delays and coordination issues, we did have a wonderful weekend together! As always, I’m looking forward to more adventures with this amazing man!

CBD and Me – My Journey to Colorado

Recently The Beard and I embarked on a two week road trip across the country to hike, camp and explore. Our intended destinations were the Rocky Mountains, Grand Tetons and Yellowstone. While we were super excited for our adventure, we also had another motive. CBD.

For those of you who don’t know, CBD or Cannabidiol is a cannabis compound that has significant medical benefits, but does not make people feel stoned and can actually counteract the psycho-activity of the THC. It has been proven to provide relief for people suffering from inflammation, pain, anxiety, seizures, spasms, arthritis, diabetes, MS, chronic pain, PTSD, depression, epilepsy and other neurological disorders.

So what does this have to do with me? When I was 14 years old I was sitting in church and suddenly a pain shot up my back, down my right arm, and suddenly I couldn’t move my hand. My arm was essentially paralyzed for an hour. Once feeling returned my ability to grasp things was incredibly stinted. To this day I can only write with a pen for maximum five minutes.

What followed this was one of the toughest years of my life, and believe me, I’ve had some rough ones. All the muscles in my body began to seize up to the point it hurt to have clothes on, let alone allow someone to touch me. I couldn’t sleep, couldn’t eat, and at one point couldn’t even read due to whatever neurological issues were happening with my brain. I lived in agonizing pain and went from one ER room to the next all while being questioned by medical staff if I was just looking for attention. A pediatric neurologist actually recommended to my parents that I be institutionalized since he viewed me as a severely psychologically disturbed individual. Thankfully my parents didn’t give a second thought to his opinion, let alone even tell me at the time. I was in pain and no one believed me.

Eventually a pediatric rheumatologist diagnosed me with Fibromyalgia at the age of 15. I weighed 82 lbs. At the time this was a fairly new condition, one that the majority of the medical community believed was a fancy term for hypochondriac. Pharmaceutical companies were not making medicine geared toward Fibro, there weren’t commercials on TV talking about fibro pain, and there were no colored ribbons honoring the fight against an “invisible” illness.

Fast forward to college and I’ve been diagnosed with irritable bowel and chronic fatigue. I weighed 90 lbs as a freshman. As an art major school was a struggle. I had to spend so many hours in the studios drawing, painting, processing film for photography. I was so physically weak that I had friends who would meet me after classes and help carry my books and art supplies to my next classes. On bad days I would leave up to an hour before my classes started because I knew it would take me that long to physically walk to class.

Later in my  mid twenties I was diagnosed with endometriosis and had my fifth surgery right before my 25th birthday. A few years later my cortisol levels dropped so low my body had no ability to manage stress and I had panic attacks daily. The pain from these attacks would last for hours leaving me in such a weakened state the doctor threatened to hospitalize me if I didn’t have some round the clock care. I could barely walk down the hallway unassisted.

Entering my late twenties I started having unexplainable pain in my left side. It was excruciating at times and you could visibly see the swelling in my spleen area. Having had every test under the sun to this day doctor’s have yet to confirm a diagnosis.

Last summer I had five kidney stones removed from both kidneys and noticed a weird correlation in my PMS symptoms subsiding. Unfortunately that didn’t last for long and six months later they were back with a fury I have never experienced. While the average woman may experience cramping and some discomfort I am down for the count. My symptoms include nerve pain in my legs, kidney pain, severe cramping and tearing, fevers, nausea and vomiting to name a few.

I have recently come to believe there might also be a possibility that a majority of my unexplained medical issues are to do something called Mixed Connective Tissue Disease. This can be confirmed by a blood test which I have yet to have done but plan on doing soon.

So this brings us to the present day and back to our quest for CBD. We drove across the border into Colorado and found a well reviewed dispensary thanks to an app called Weed Maps. We walked in feeling like we semi-knew what to expect thanks to our binge watching of a show called Weedequitte on Viceland. I highly recommend checking it out.

The people working behind the counters are called budtenders and were incredibly helpful. I explained that I was looking for some CBD edibles for pain management and they reviewed several options. The first thing I tried were these Synergy mints. They contain a 1.1 ratio of CBD to THC, each mint containing 5 mg of both.

I took 10 mg after eating a hearty lunch and we went on a hike up to Loch Vale near Estes Park. To give you a point of reference, when we went hiking this summer at Red River Gorge in Kentucky there was a point on the trail that I was literally in tears. My side pain (spleen) was flared up causing me to double over. My kidneys seemed to be throbbing with every step, and cramps had started causing me intense pain. My hands and legs were super swollen and I was just miserable.

Now here I am with 10mg CBD and hiking up this trail like nobody’s business. We hiked somewhere around 11 miles and not one symptom. Not one twinge. My spleen didn’t hurt, my kidneys were content and my body wasn’t swelling up like a balloon. The only thing I did notice was how hungry I was! Me, the person who rarely experiences hunger and tends to forget to eat, was devouring every snack in my pack. All I could think was, “Is this how other people feel all the time?”

We also purchased these drops. These contain a 1.1 ratio of CBD to THC as well. I am a person who has spent half their life nauseous. When PMS symptoms start my body immediately starts vomiting. All I needed was .25mg of the drops and nausea, migraines and cramping disappeared within the hour. Compare that to 800mg of Tramadol, a narcotic that barely takes the edge off my pain.

For someone who has spent the past seventeen years in pain, dealing with one unexplainable issue after another, the concept of feeling fine is relative. I’m exhausted, this hurts and that hurts, but I’m not doubled over so today is a good day, barely scratches the surface on an explanation. To hear from doctor after doctor that, “They’ve never seen this before” is frustrating but also expected since you didn’t think they could help you in the first place. To be resigned that this is life, and I’m a tough chick and I will always try to make the best out of what I’m given and stay positive, is good yet sad.

However, to finally go to a place and try the one thing you’ve held out hope would help you and it does, is such an emotional experience. I took CBD and I didn’t hurt. Not just, well I don’t feel too bad, or the pain isn’t that severe, or it’s only coming in small waves. I DON”T HURT! I’m thirty-one years old and I don’t remember a time when that was true. Finally I’ve found something to help me and there’s just one problem. It’s illegal in most of the United States. The federal government still considers marijuana a schedule one drug, right up there with heroin. While the CBD I purchased only contained small amounts of THC, it is still a bi-product of marijuana and considered a felony to possess outside of the few legalized states we have.

While you may have a different view point on the effects of legalizing marijuana just think about this for a minute. Think back to a time when you had the flu. You have a fever, chills, you feel achy all over and you can’t keep anything down. It’s the worst and you wish someone would put you out of your misery. Now imagine that there was a drop you could take that could remove all those symptoms within the hour. However, it’s illegal where you live. It can take away all your pain, but you can’t have it. Instead, you get to continue experiencing all your flu symptoms every minute, of every hour, of every day. That’s what is happening to millions of people thanks to the federal government.

While I can’t make it happen over night, my goal is to eventually move to a legalized state. If you could be pain free, wouldn’t you?

Dancing in the Windy City

Last week we hit the open roads, or more accurately the semi-clear I-65N, up to Chicago for the Taste of Kizomba weekend. While I’ve been to Chicago on many occasions I’ve never had the pleasure of checking out their social dance scene. I drove up with my friend Jen for a girl’s weekend of food, dancing and a little exploring and we managed to accomplish all three. In case you’re wondering, The Beard was working, and yes I did bring him back presents!

We stayed in this charming Airbnb that was about 10 minutes, depending on traffic, away from our dance studio. Everything about this place was cozy. I’m talking sink into all the furniture, binge on chips and chocolate, never want to leave cozy. However, we had things to do and healthier foods to eat so off we went.

As you may know by now, I’m a foodie. The best part about traveling is experiencing the local cuisine and our first night there we headed to Cuba 312. Let me just say, these were hands down the best yucca fries I have ever tasted! Looking at them now is making my stomach rumble. Also, I haven’t eaten breakfast yet but I don’t think that has anything to do with it.

When it comes to dresses I’m a fan. I wear one almost every day to work and love wearing them for salsa dancing. However, when it comes to dancing Kizomba, I’ve found that pants are far easier and less revealing. So this weekend I decided to rock some new jumpsuits for the dance socials and they were cute and comfy! I mean, when  you look dressed up and yet feel like you’re in pajamas, it’s a win-win folks!

Saturday morning we headed to Lincoln Park and explored a little bit before heading to the dance workshops. It was so hot, we were a sweaty mess by the time we were finished, but totally worth it.

We stopped at this cool place called Bow Truss Coffee Roasters to get The Beard his coffee gifts. I try and bring him back coffee beans from where ever I travel without him.

I also made my own Beard Stick Figure so he could be in some of our photos!


We had dinner at a place called Knife & Tine and if I’m ever back in Chicago I will be hitting them up again. To start, the restaurant was absolutely gorgeous. I wanted to be that instagrammer wondering around taking pictures of everything, everyone and their food! However, I contained myself to just my table. Behold, pork belly with onions, candied apples and a cornbread cupcake. I cleaned my plate!

Sunday we stopped for the required Chicago pizza. Below is a garlic artichoke pizza that was divine. We also became the nicest people ever as we turned our car into a pizza delivery vehicle and brought The Beard and others their very own Chicago Pizzas on our way home.

Nature, Naps and What We Ate

This past weekend we basically ate a lot of food and napped, which is exactly my kind of weekend. We had dinner plans for Friday evening, but found ourselves hungry mid-afternoon and decided to pre-game dinner with a little BBQ! Now, I’m a bit of a BBQ snob, in that my standards are pretty high! This brisket was on point and as I type this I’m craving another platter of meat!

On the way to our second dinner, and yes we are practically hobbits minus the height, The Beard was reading instructions from his friend saying the restaurant was super colorful and we couldn’t miss it. I made the offhanded comment that the building was probably lime green and orange. Feel free to soak in that feeling of awe and amazement right now. It’s ok. I’m amaze myself.

I don’t have any shots of our food, as I wasn’t really impressed. I’ve heard several people say good things about this place, so maybe they were just having an off night with the crowd during our visit. So while waiting for our check, tom foolery ensued. If you’re thinking, “Is that Star Lord shooting a tortilla chip into tiny pieces?” then you are correct.

Saturday we got up and headed out for a couple’s massage The Beard had nicely arranged. Sorry, no pictures of that!

From there we headed to the Market District to pick up ingredients for a new recipe we were dying to try out. This recipe was for orange ginger- beef stir fry with a homemade marinade from ZenBelly Cookbook. Now this is not an advertisement, just what we were making for dinner. However, it’s a great book so if you’re looking to add to your collection check it out. Zenbelly Cookbook

We spotted a food truck in the parking lot and since this was more of an organic type market we decided to check it out. Neither of us do well with fried food although it sure is yummy. I ordered a chicken and pickled veggie lettuce wrap and The Beard opted for a spicy carne asade wrap.

Sunday was a “Make something out of the ingredients in the fridge” day. That turned into lettuce wraps with mayo, turkey, bacon, mushrooms and onions. That was so good I ended up picking up more ingredients to actually make them on purpose!

We also installed my new pot rack, courtesy of The Beard’s parents for my birthday. Of course this now means I need to thoroughly clean out my cabinets, which then means I need to clean out my storage cabinet in the garage so I can then relocate things from my inside cabinets. It’s amazing the domino effect that ensues by simply hanging a pot on the wall! But for now it is what it is, because just thinking about it makes me want to take a nap!

I’ve also been knitting a lot lately. Apparently I have a schedule and mid-summer I start knitting feverishly with Christmas gifts in mind, at least according to The Beard. I don’t have shots of all the recent items, but let’s just say I’m really into hats right now. I also created this draw string cowl for hiking and I’m pretty impressed with it! You can wear it as a cowl to keep your neck warm or you can pull the draw strings at one end and wear it as a slouchy beanie. I made this with wool-ease yarn so it is machine washable making it perfect for the trail. Once again I have the perfect model!

To end on a random note, when I was a little girl my sister and I would take our mickey mouse fishing poles, bobbers included, and fish in the puddles in our driveway. We hadn’t yet made the connection that fish didn’t just magically appear in any body of water. My mother was happy we were playing and not fighting, as sisters tend to do, so she never dashed our hopes of catching a big one! Last week I came home and despite the lack of puddles I found a crawfish in my driveway!  We have had a lot of rain recently so I’m wondering if he was washed downhill to surprise me. Either way, my patience paid off and I finally caught something in my driveway!

Saturday in Shawnee

This weekend we loaded up our gear and headed down to Shawnee National Forest. After our recent foray at Red River Gorge we reevaluated our packing procedures and shed a lot of unnecessary gear lightening up our packs quite a bit. How quickly things change in 6 weeks!

We arrived at the park and headed over to the Garden of the Gods. Since this was a popular area we had to maneuver around other people which was tedious at times. The Beard kept saying, this is why we don’t hike with the public….

The forest was beautiful but for those thinking of heading out there yourselves, be warned their maps are the worst we’ve seen. Very haphazard and based on our calculations, the mileage wasn’t correct either. At one point we were stuck on a trail The Beard referred to as “Hell” because we were wading through mud and tons and tons of spiders! We decided we were NOT going back that way and ended up taking the road through the country side much to the dismay of a large herd of cows.

However, in our typical fashion we made it to the car right as nightfall hit.We survived our hike and got in 13.67 miles! As always, I love spending time together, even if it involves spiders, mud and a few more miles than anticipated!

Sunday Stroll

Every summer I have a list of activities in my mind that seem like summer essentials. Movies in the park, cookouts, swimming, etc. Sometimes we actually get to check things off the list and sometimes we don’t. We happened to have a day where neither of us were working or had other obligations so despite the scorching heat we headed over to the gardens at the Indianapolis Museum of Art, better known as the IMA. The Beard had his camera in tow and I had my hat.

The gardens were beautiful! I could sit listening to the water gurgle and watch the fish swim for hours if it hadn’t been for the cascade of sweat pouring down my face!

After exploring all the grounds we needed sustenance and what pairs best with an afternoon of greenery? Burgers of course! We decided to try out a new place to us called Burgerhaus. Oh man! I’m not one to typically order a burger but I ate every bite of the Tuscan.

Quick Jog Through June

Where has this month gone? Last time I was blogging we were getting ready to head out to Red River Gorge and now we are on the precipice of July! So what have we been up to? LOTS! Cue video montage….

Aren’t we cute? So, I bet you’re wondering how all that dehydrated food turned out. The answer is awesome! This trip was our first opportunity to gear test, well everything. Our packs, new hiking boots, tent, air pad, sleeping bags, cooking stove, water filtration and yes, dehydrated food. The Beard will be updating you all with a run down of gear performance, mileage and discovery since he is the expert and I will update you on what I know best. Food!

Welcome to our campsite! While The Beard set up our humble abode I set about making dinner. We opted for beef & bean burritos because they were the heaviest meal in our pack, so best to get out of the way first! While it might not look like much, typically burritos never do! Slapped a few spoon fulls onto some tortillas and we were in business. This was one of the easiest dehydrated meals I made and also incredibly delicious!

The next morning we knew that rain was on the way so The Beard packed up camp while I made breakfast. We have a system folks. We had a sweet potato porridge that was warm, filling and delicious! The Beard was a huge fan!

We finished and hit the trail just as the rain started pouring down. We continued in the deluge for several hours but happened to catch a break on the top of the ridge.

A few hours later it was time for lunch! Spaghetti! We found a spot to lay our gear in the sun and cook our fancy Italian feast! Since we were dealing with pasta, it did take longer to rehydrate than some of our previous meals. I don’t know if it was the combination of fatigue and hunger, but that was the best spaghetti I’ve had in a long time!

Red River Gorge was Gorgeous! So many different eco systems along the Rough Trail! We survived our journey and will be heading out in a few weeks to Shawnee National Forest! Stay tuned!

 

Trail Food Prep 101

When The Beard first announced he was going to hike the Appalachian Trail one of my first thoughts were, “How are we going to feed him?” Fast forward six months later and we are headed out to Red River Gorge to gear and taste test.

After lots of internet research on trail food prep it was finally time for me to embark on making our meals. The plan is to make several different things this summer to see what is easy to produce, what is cost effective and what flavors we like best. From there we will begin creating our stock for the AT 2017! So buckle up because I have lots of pictures and an overwhelming amount of info!

For this three day hike I needed to make 9 meals. I started with creating a spreadsheet because I can’t function in a world without them! I created my meal plan on the first tab. From there each sequential tab was labeled Breakfast, Lunch, Dinner. Under each tab I listed the meal followed by ingredients and measurements. I created columns next to each item so knew if it was something I had on hand or needed to purchase. I want to preface that I know this can be done cheaper when purchasing basics in bulk and we will be doing that for the AT. However, for this hike we are simply testing everything out. So let’s start with breakfast!

Breakfast
The majority of these meals were easy to prep as most of it does not require cooking or dehydrating. The cinnamon oatmeal only required assembly.

The sweet potato porridge only required me to make sweet potato bark. I added my sweet potatoes to my instant pot and they were mashable within ten minutes! From there I added applesauce, maple syrup and cinnamon and spread it on a dehydrator tray.  I dehydrated at 125 for about 8 hours. Also – the sweet potato bark is delicious and you can eat it on it’s own!

The blueberry quinoa only required me to dehydrate blueberries since the quinoa flakes are instant. Frozen blueberries seem to be the easiest to dehydrate, but let me warn you they take awhile. As in forever give or take a few hours. I believe mine took around 18 hours at around 135 but I know I also blocked out some specifics in this dehydrating marathon!

Now onto lunch. I have made this quinoa recipe before and thought it would make a great trail meal lunch. Filling but not too heavy. I liked it so much I even blogged about it at the time. You can check it out here: Ode to Quinoa

If you’ve never made quinoa before it is super easy! I start sauteing a shallot in some oil and then adding water and white cooking wine. Bring to a boil and cook your quinoa for 15 minutes at a simmer. Done! I then add a little bit of lemon juice and seasoning and spread out on trays at 125 for 4-6 hours.

From there I just added some chopped pistachios and dried cherries into the bag and sealed them up!

Everyone loves a good burrito. If not, get out of here right now because I’m entering burrito mode! I was a little nervous about how well the ground beef would dehydrate but thankfully my fears were for nothing. I chopped up an onion and threw it in the skillet with ground beef. Strained it then added my spices, refried beans and enchilada sauce. I let this simmer on low for roughly 20 minutes to thicken and develop all the flavors. That’s it folks! This was one of my easiest meals from start to finish. I dehydrated at 145 for 8 hours and woke up to perfectly dried burrito filling.

I added the corn shells into the packs since we are using them this weekend. However, for long term storage I don’t recommend keeping the shells in the bags.

Now, onto this curried root bark stew! Warning: This was the most labor intensive meal I made for this whole trip. You know how you look at a recipe and think, well that’s not bad, I can do that? Now take that recipe and throw it into a whirlwind marathon of cooking, dehydrating and packing and suddenly you are asking yourself, “What on earth was I thinking?” The ingredients were simple, but it required a lot of chopping of root veggies, which we all know are just a delight! They filled up my largest soup pot and had to simmer for quite awhile to reach the right consistency. I also took 4 cups of the veggies and added them to the broth to make a root bark. This was then added to the bags and when we rehydrate it will help add thickness and flavor! For more on that bark check out it’s honorable mention here: How We Holiday

Dinner
Now onto dinner! A romantic Italian meal on the trail. While I don’t think we will be having any Lady and the Tramp moments, pasta is easy, cost effective and filling. I made an entire box of spaghetti and added a jar of sauce with a few spices. I then let it sit in the fridge over night so the noodles could soak up most of the sauce. Threw that in the dehydrator for about 10 hours at 135.  This made 4 bags with 2-3 servings each.

I also added sauce to a tray to make tomato leather. From there I added the leather to a blender and ground it up into a powder. I will then add that into the spaghetti mixture to add more sauce when we rehydrate.


The chicken chow mein was also ranked as one of my top easy dishes. I purchased the smallest rice noodles I could find. These don’t need cooked so you can add them to your bag right away. I added a bag of frozen stir fry veggie mix to the trays at 135 for roughly 6 hours.

I made a brine for the thin cut chicken breasts and let them soak for a couple days in the fridge. I did this to impart some flavor without adding specific seasonings to the chicken since I wanted to use it in multiple dishes. From there I placed the breasts in my instant pot with some chicken broth and 15 minutes later there were ready to shred.

Mushroom Stroganoff – Now this dish gave me some issues and it’s my own fault. The recipe was very simple and I decided to add some sausage to it. Turns out, sausage was really hard for me to dehydrate because of the fat content. I cooked it, strained it, paper toweled it dry and then put it on the tray. Eight hours later I notice a pile of grease in the middle. So repeat the whole straining process again and dehydrate some more. While I know it’s dehydrated I’m still a little concerned about it. Since we are eating it this weekend I’m not worried, but not sure I would trust it for long term storage. Also – I’m sure there is someone out there who is an expert on dehydrating sausage and I will figure it out!

Here is the recipes for the barks I made on this trip. Some went into meals and some are just for snacks.

Bark

Now it’s time to talk about vacuum sealing. While I have vacuum sealed things years ago, I had mainly just used to to purchase bulk meat and package for freezing. I had never attempted to use dehydrated food. As it turns on, the majority of dehydrated ingredients will poke teeny tiny holes in the bags because of the vacuum pressure causing you to lose your seal within minutes if not immediately. I discovered this while trying to vacuum seal spaghetti at 10:30pm. I was so pleased with my meal I just wanted to package it so I felt completely satiated and instead ended up frustrated and close to tears.

After searching the web at 6am because I had to find a solution I discovered a recommendation to place dehydrated foods in a separate bag before placing in a vacuum seal bag. That’s right my friends. You have to double bag your food! Do not seal the first bag shut. Keep the seal open and the vacuum pressure will close it upon sealing.

Here is the finished product of my labors! Nine different types of meals, which will feed us 16 times give or take and technically has 34 servings according to my calculations. However, 34 servings for average people are not the same as for The Beard!

Like most things in life, this is a process of trial and error. Sometime things were easy and I was would jump for joy. While other times I wanted to scream and pull my hair out! However, as I learn so will you. I have six months of meals to prep for the AT and by George I will be a trail chef at the end of this!
